#Recipe: Simple Summer Snack Bars

Whether you’re stomping around the Calgary Stampede Grounds this week, prepping for a summer road trip, or planning a weekend of camping, healthy eating is easier when you pack some simple snacks. The recipe I’m about to share has been adapted from Angela Liddon’s {Oh She Glows} Feel Good Hearty Granola Bars.

I like this recipe because the sweetness comes from ripe bananas and dried cherries (and dark chocolate if you choose). That’s it – not much added sugar here! It is also loaded with whole grain oats, nuts, and seeds for fibre, healthy fats, protein, and other nutrients.

Simple Summer Snack Bars

Ingredients:

  • 1.5 cups mashed ripe bananas {3-4 medium bananas}
  • 1 teaspoon pure vanilla extract
  • 2 cups rolled oats {I love Roger’s Porridge Oats for some extra fibre}
  • 1/2 cup dried cherries or blueberries {optional}
  • 1/4 cup mini dark chocolate chips {optional}
  • 2 cups nuts and seeds, chopped {I used walnuts, sunflower seeds, and sliced almonds}
  • 1/4 cup hulled hemp seeds
  • 1 teaspoon cinnamon
  • pinch of sea salt

Preparation:

  1. Preheat the oven to 350F. Lightly grease a large rectangular baking dish (approx. 8.5″ x 12.5″) or two smaller square dishes and line with a piece of parchment paper or tin foil so the bars are easier to lift out.
  2. In a large bowl, mash the banana until smooth. Stir in the vanilla.
  3. Place the rolled oats into a food processor (or blender on the lowest speed) and pulse until the oats are coarsely chopped. Stir oats into the banana mixture.
  4. Chop the nuts and cherries and stir these with seeds and other ingredients into the banana-oat mixture until thoroughly combined.
  5. Spoon mixture into prepared dish. Press down until compacted and smooth out with hands until even.
  6. Bake for about 25 minutes until firm and lightly golden along the edge. Place dish on a cooling rack for 10 minutes then carefully lift out. Place granola slab on a cooling rack for 10 minutes and then into the freezer for another 10 mins (to cool quicker).
  7. Slice into bars once they are cool. Wrap with parchment or plastic wrap and store in airtight container in freezer until ready to consume!
