What’s for breakfast? Try this: Toasted Coconut Baked Oatmeal.
A lot of people don’t put much thought into breakfast. They either skip it, grab it to go, or are happy as a clam mindlessly eating the same thing every day. If you’d like to make breakfast more regular, mindfully enjoy it, or just have a few more ideas about what to eat, it’s often helpful to have a few solid go-to recipes (and my last video on mindful breakfast planning will help too)!
I found this Toasted Coconut Baked Oatmeal recipe on the Minimalist Baker‘s blog and I instantly wanted to try it. And so I did. And I’d like to share how.

You might even play around with a little less maple syrup to find your perfect amount of sweetness.
The Minimalist Baker’s blog made my top 5 favourite vegetarian or vegan recipe blogs in the Mindful Meal Planning Made Easy Toolkit (see below). This website has become an awesome resource for helping me get experimental in the kitchen, with few ingredients and health in mind.
